dad, grandpa and I all smoking some fresh salmon that I caught dip netting in Homer Alaska. We used a Bradley automated fish smoker and an older style one which you have to keep feeding wood. The Bradley is great because it auto feeds wood pellets into the smoker every so often so once you start the machine you can just walk away. I usually freeze it. I’m sure if you vacuum sealed it it would last a while in a refrigerator, but freezing it, it will last for a really long time. I have smoked salmon that’s several years old. It makes good smoked salmon dip or sushi!

That’s an interesting tip. We smoked a lot of salmon using metal racks and I can honestly say I never tasted any metallic taste.

the metalic rack and bowl react with salt from brine, will impart metalic taste in fish, never use metal inc. wooden fork.
